|Production Method||the fruit spent 24 hours in a cold room to drop the fruit temperature and avoid dry icethe grapes were de-stemmed and crushed into small 1 ½ ton open top fermenterscold soaked for a feew days until the wild yeast kicked inafter 12-16 days, with 2 daily punch downs, we drained the free-run (~75%) and gave the remainder a gentle pressthe juice is racked and the indivual batches are put into oak barrels to allowed the second fermentation (converts malolatic acid to lactic acid) utilizing the natural wild malolactic bacteria to beginthe wine was racked twice during the barrel agingthe wine is unfined and unfiltered21 months barrel aging|
