Severe winters and dry summers mould its flamboyant features under the bright sunshine of Provence. SOIL : Clay-limestone GRAPE VARIETY : 83% Clairette Blanche, 15% Aligoté , 2% Muscat à petits grains.

Production Method Entirely gathered by hand, the Crémant de Die Brut is made using the Traditional Method.After an initial fermentation in tanks, the wine is bottled and the addition of a tirage liqueur made of sugars and selected yeasts triggers off a second fermentation.The maturing process takes one to three years on slats.Adding an expedition liqueur, after the removal of sediments by freezing bottlenecks and disgorging, ends up the process.
Food Pairing Perfect as an aperitif, on its own or in a kir cocktail, it can also be enjoyed throughout an entire meal on fish or white meats.
