Produced from the Casale property owned vineyards in San Gimignano, the “Ab Vinea Doni” (Latin, “gifts from the vineyard”) is made with a hand selection of Vernaccia and Chardonnay grapes. The vinification is carried off the skins, soft pressing the grapes. The fermentation and refining take place in small French oak barriques for about 5 months in a temperature-controlled room. Once bottled, it completes its refining for a few more months before leaving the winery as required by the DOCG regulation. The typical characteristics of the Vernaccia are enhanced by the fermentation in oak barrels, while the small addition of Chardonnay increases the bouquet and elegance of this wine. The main features of the Ab Vinea Doni are: straw yellow colour with golden highlights; very fine bouquet, with appealing vanilla, pear, apricot and sweet spices; dry and deliciously mature with a pleasing mineral presence, slightly nutty with floral lemon honey notes. Grape variety:Vernaccia 95%, Chardonnay 5% NB: In 1993 Vernaccia di San Gimignano became a DOCG, allowing 10% of other white grapes to be blended with the indigenous Vernaccia in order to create an even finer product.
