This wine comes exclusively from vines surrounding Château de la Bonnelière. This is a fine clay-limestone terroir that creates wines with lovely elegance and a fresh, delicate aromatic length.
Vinification:
The manual harvest preserves the grapes, as well as gravity tanks. Its vatting during 4 weeks at a controlled temperature allows us a gentle extraction of tannins. Fermentation takes place thanks to indigenous yeasts without further addition.
After the malo-lactic fermentation, the ageing continues in « demi-muids » in our cellars under the castle of Chinon for 12 months.
Tasting comments
Appearance: dark ruby red
Nose: expressive with fruit (strawberries) and coffee aromas complemented by toasted and oaky notes.
Palate: supple and pulpy on entry to the palate with a meaty body and tannin that melts into a lovely well-rounded structure.
